Bacon-Wrapped Chicken Thighs with Cheddar & Jalapeño

Take your BBQ chicken up a notch. These thighs are juicy, crispy, and filled with gooey cheddar and jalapeño heat — the kind of butcher innovation that gets people talking.

 

🛒 Ingredients (Serves 4):

  • 4 Free-Range Chicken Thighs (boneless, skin-on)

  • 4 rashers streaky bacon

  • 50g cheddar, grated

  • 1 fresh jalapeño (or 1 tsp pickled), finely chopped

  • Salt & pepper

  • Toothpicks or butcher’s string

 

🔥 Method:

  1. Flatten chicken thighs and season.

  2. Add cheddar and jalapeño to the centre.

  3. Roll up and wrap each thigh in a rasher of bacon.

  4. Secure with a toothpick or string.

  5. Grill or oven bake at 200°C for 25–30 mins until cooked and bacon is crispy.

 

🥗 Serve With:

  • Sweet potato wedges

  • BBQ corn

  • Ranch or garlic sauce
