Chicken Thigh Tray Bake with Mediterranean Vibes

A fuss-free midweek favourite: succulent free-range chicken thighs baked with Mediterranean flavours.

 

🛒 Ingredients (Serves 4):

  • 8 x Free‑Range Chicken Oyster Cut Thighs 

  • 2 lemons, sliced

  • 2 sprigs rosemary

  • 200g black olives

  • Olive oil, salt & pepper

  • Optional: feta crumbles

 

🔥 Method:

  1. Preheat to 200 °C.

  2. Toss chicken, lemons, olives, oil, salt, and pepper in a tray.

  3. Roast for 35–40 min until golden and cooked through.

  4. Scatter rosemary and feta before serving.
