Game On: Pheasant Breasts in Creamy Wild Mushroom Sauce

Seasonal game meat meets comfort food in this indulgent sauce-based dish.

 

🛒 Ingredients (Serves 2):

  • 2 x Pheasant Breasts 

  • 150g wild/chestnut mushrooms

  • 1 small shallot, chopped

  • 100ml cream

  • 1 tbsp butter

  • Salt & pepper

 

🔥 Method:

  1. Sear pheasant breasts (3 min/side) in butter until pink inside. Set aside.

  2. Sauté shallot and mushrooms in the same pan.

  3. Add cream, simmer until thickened.

  4. Nestle pheasant back in to warm through, season, and serve.
