To keep the patties juicy, we recommend blending venison with pork fat — a technique used in top kitchens and butcheries alike.

 

🍔 What You’ll Need:

  • 500g venison mince

  • 200g pork fatback or fatty pork mince

  • 1 small onion, finely diced

  • 1 tsp Worcestershire sauce

  • Salt & cracked black pepper

  • Optional: crumbled blue cheese, garlic, or chopped herbs

 

🔥 Method:

  1. Combine all ingredients gently — don’t overmix.

  2. Shape into 4 equal patties and press a thumbprint into the centre of each (this helps them cook evenly).

  3. Chill for 15–30 minutes.

  4. Pan-fry or grill over medium-high heat for 4–5 minutes per side.

  5. Rest before serving.
