A true butcher’s secret, the Iberico Collar – also known as Secreto – is a hidden cut tucked between the shoulder and loin. Highly sought-after for its incredible marbling and unique texture, this cut is one of the most flavour-packed pieces of pork available. It’s called “secreto” for a reason – it was once kept aside by butchers for their own kitchens.

With its generous fat content and loose grain structure, Iberico Collar is extremely versatile. Grill it for a smoky char and juicy bite, slow-cook it until fall-apart tender, or sear it hot for a crisp crust and succulent centre. Its natural intramuscular fat means it stays moist and full of flavour, no matter how you cook it.

Sourced from free-roaming, acorn-fed Iberico pigs, this cut embodies the very best of Spanish pork – ethical, artisanal, and unforgettable.
